Job Description
As the Assistant Kitchen Manager at our bustling sports bar, you will play a vital role in ensuring the success of our kitchen operations.
Working in a fast-paced and dynamic environment, you will use your excellent organizational and leadership skills to assist the Kitchen Manager in overseeing all aspects of the kitchen, including food preparation, inventory management, and maintaining cleanliness and sanitation standards.
Your passion for food and knowledge of sports bar cuisine will allow you to contribute to menu planning and development, as well as train and motivate our kitchen staff to provide exceptional service to our customers.

Qualifications
* A minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter.
* At least 6 months experience in a similar capacity.
* Must be able to communicate clearly with managers, kitchen and dining room personnel and guests.
* Be able to reach, bend, stoop and frequently lift up to 50 pounds.
* Be able to work in a standing position for long periods of time (up to 10 hours).
* Must have the stamina to work 50+ hours per week.
* Attend weekly manager meetings.
Responsibilities
* Ensure consistent adherence to recipes, portioning, cooking, and serving standards.
* Assist in employment decisions, including interviewing, hiring, evaluating, and disciplining kitchen personnel.
* Provide orientation on company policies and oversee training of new kitchen staff.
* Fill in where needed to maintain guest service standards and operational efficiency.
* Prepare all necessary paperwork promptly and efficiently.
* Maintain cleanliness and functionality of equipment through personal inspection and maintenance programs.
* Collaborate with restaurant managers on menu planning and pricing, establishing portion sizes and recipe cards.
* Order products according to specifications, ensuring proper delivery and adherence to receiving policies.
* Control food cost and usage through requisition, storage procedures, recipes, and waste control.
* Oversee employee performance appraisals in accordance with restaurant policies.
* Schedule labor to meet business needs while managing labor costs effectively.
* Administer corrective action for policy violations promptly and consistently.
* Supervise kitchen staff training in equipment operation, cleanliness, and sanitation.
* Maintain cleaning schedules for kitchen areas and equipment.
* Monitor and regulate food holding and refrigeration temperatures.
